Tips for Cooking with Honey
The first time you try substituting honey for granulated sugar in a recipe, begin by substituting honey for about half the sugar. After some experimentation and practice, honey can replace all the sugar in most recipes.
When baking with honey, remember the following:
- Honey is sweeter than sugar - about ¾ cup honey = 1 cup sugar
- Reduce other liquids by about ¼ when substituting honey for sugar.
- Add ½ teaspoon baking soda for each cup of honey used.
- Reduce oven temperature by 25% to prevent over-browning.
- Coat the measuring cup with non-stick cooking spray or vegetable oil before adding the honey.
